I recently took a Persian (Iranian) cooking class at my local PCC Natural Markets. I brought my boyfriend along to eat the one meat dish (lamb). We learned so much about how Persians cook with herbs and spices.
I own several Persian cookbooks and plan to present lots of YouTube videos for us to watch together in class. I’m not an expert at Persian cooking by any means; we’ll learn together!
For those of you who don’t live in a big city with international markets and well stocked grocery stores, I’ll come up with a short list of spices you can buy on Amazon. Most Iranian dishes in these cookbooks use familiar spices we have around the house already, such as cumin. Some of the more difficult to source ingredients (like barberries) can be purchased on Amazon or you can substitute things like dried cranberries.
Pick up any Persian or Iranian cookbook at your local library to use as your textbook.
Or join me in learning from “The Saffron Tales: Recipes from the Persian Kitchen” by Yasmin Khan.
